When celebrating our wedding on a mountain farm in the Sierra Nevada of Southern Spain, we were gifted a wine press. This was the start of our little cider adventure - we went home and pressed apples from the farm into fresh must, got out old glass balloons from the farm attic, and made our first cider. Everyone who tasted it was excited and encouraged us to make more. Of course we had to!
Our cider and apple musts are made from fine traditional varieties, each with its own distinctive flavor and history.

Our apple juice contains only 100% apple and is completely non-alcoholic. We press apple juice of different varieties, so everyone can find their favorite. The must is great to serve with good meals and a delicious thirst-quenching drink. You can also try apple glögg - warm the must with a cinnamon stick, a piece of star anise and perhaps a spoonful of sugar, and enjoy it on a winter evening.
In the Fall of 2022 we made juice of four different apple varieties: Gravenstein, Aroma, Summerred and Filippa.
Artisan cider making
These traditional apple varieties are very well suited to cider making - the must is extra fresh and flavorful, and the cider is full-bodied and full of character. The variety leaves its mark on the finished product, making each cider unique.
After harvesting on the slopes, we take the apples straight to the farm's cider mill, where they are crushed and pressed into fresh must. For those who can't wait, we bottle some of the delicious juice right away. This must can be enjoyed as a fresh, non-alcoholic alternative all year round. The rest is carefully filled into balloons and tanks and given plenty of time to mature, allowing the aroma and flavor to develop. Our cider is completely free of sulphites or other additives and is a purely natural product. Even the yeast comes from the apple orchard.
Serving tips
For the best flavor experience, cider should be served slightly chilled, around 6-8°C. Until you are ready to serve it, it is best to keep the bottles cool and horizontal so that the fine bubbles do not disappear through the natural cork.
Cider of all kinds is a great aperitif. The best accompaniment to cider is cheese. Cider can also be served with many types of food. The drier ciders go well with seafood as well as meat dishes and sweeter ciders are particularly good with desserts and cakes. Try them out and find your favorite combinations!
